No Bake Christmas Cookies - Part 2

Here is the second part of my Christmas special featuring no bake Christmas cookies. Below are three recipes that show how you can use white chocolate chips for some easy and delicious no-bake, crowd-pleasing delights that will bring joy – and good taste -- to your holidays.

Holiday Buttons

Ingredients:
• 1 one-pound bag pretzel rounds
• 2, 12-ounce bags white chocolate chips
• Red and green M&M candies (approximately 100)

Procedure:
1. Lay pretzel rounds on wax paper.
2. In a microwave-safe dish, melt white chocolate chips in microwave at 80% power for 50 seconds at a time until just fluid (gently stir between).
3. Pour white chocolate by teaspoonfuls into center of pretzel rounds. Press one M&M candy into each pretzel center.
4. Let set for at least 20 minutes or until firm before removing from waxed paper.
5. When stored in air-tight containers, these will remain fresh for a week. They also can be frozen for later use.

Peppermint Bark

Ingredients:
• One 12-ounce package white chocolate chips
• Approximately 1 1/2 cups crushed peppermint (candy canes or peppermint candies)

Procedure:
1. In a microwave-safe dish, melt white chocolate chips in microwave at 80% power 50 seconds at a time until just fluid (only gentle stirring will be required).
2. Line the bottom of a 13 x 9 inch pan with waxed paper.
3. Spread crushed peppermints on waxed paper. Then pour melted white chocolate chips on top.
4. Chill in refrigerator until firm.
5. Break into pieces and enjoy! Peppermint bark makes a great gift wrapped in plastic wrap with a red ribbon.

White Chocolate Clusters

Ingredients:
• One 12-ounce package white chocolate chips
• 2 tablespoons butter
• A 2-cup combination of the following, in any combination:
- 1/2 cup raisins
- 1/2 cup pretzels
- 1/2 cup chopped graham crackers
- 1/2 cup peanuts
- 1/2 cup cashews
- 1/2 cup almonds
- 1/2 cup pecans
- 1/2 cup cereal such as crisped rice, Cheerios
- 1/2 cup chocolate chips or chocolate candies

Procedure:
1. In a microwave-safe dish, melt white chocolate chips with butter in microwave at 80% power 50 seconds at a time until just fluid (only gentle stirring will be required).
2. Immediately stir in remaining ingredients until coated.
3. Place by tablespoonfuls on waxed paper and let sit until firm.
