Homemade Chicken Soup

In this times wherein flu viruses are a major issue around the world, this homemade chicken soup recipe that I am going to share with you can help treat or lessen the symptoms caused by a flu or cold virus.

• 1 2-3kg chicken
• 1 package of chicken wings (approx 300-500gm)
• 3 large onions
• 1 large sweet potato
• 3 parsnips
• 2 turnips
• 11-12 large carrots
• 5-6 celery stems
• 1 bunch of parsley
• Salt and pepper to taste (optional)


1. Clean the chicken, place into a large pot and cover with cold water. Bring the water to a boil.

2. Add the chicken wings, onions, sweet potato, parsnips, turnips and carrots. Boil for about 1.5 hours.

3. Remove the fat as it accumulates on the surface.

4. Add the parsley and celery and cook for a further 45 minutes. Remove the chicken.

Note: The chicken is not used further for the soup, however, the meat can be removed from the bones and used for another meal (delicious in salads or used to make chicken burritos).

5. Puree the vegetables and broth in a food processor or pass through a sieve.

6. Salt and pepper can be added to taste at this point.

The soup can be served alone, with toast or cooked rice noodles.
